Skaska

Skaska (cf. Dictionary) – an oral story with elements of fantasy passed down from generation to generation.

The craft distillery Skaska specializes in plum brandy (šljivovica), which is carefully produced in small batches in a traditional way in copper stills through double distillation – prepečenica. The entire process takes place under the control of our master distiller, Mr. Zoran Jevtović, who is a 4th-generation master of plum wine production.

The Skaska distillery is family-owned and located in the small Šumadija village of Bare, on the former estate of one of our founders, Mr. Andrej Bošković. Starting from 2017, the reconstruction and adaptation of old buildings is underway, which are gradually taking on the appearance of a modern distillery while retaining the authentic spirit of Šumadija. Plums are grown in three locations with a total area of 2.5 hectares, making up about 1,100 trees.

The production capacity is up to 10,000 bottles per year, made from plums obtained from our own orchards, which yield up to 70 tons in full harvest. After the late harvest in September, when the plums are technologically ripe and ready for picking, the processing and separation of the skin begins, then the plum heads are transferred into stainless steel vessels with a volume of 10 tons, where spontaneous fermentation takes place under controlled conditions without the addition of any oenological agents. After the fermentation is complete, the distillation process begins immediately in two copper stills with a capacity of 400L and 1000L, using the traditional method – over wood fire. The resulting distillate of over 60% alcohol is placed exclusively in 225L French oak barrels for a minimum of 5 years of aging.
